Simple and Easy Spinach Salad with Feta Cheese and Tomatoes

Spinach, Feta, and Tomato Pasta
Ingredients:
8 oz (225g) pasta (your choice: penne, fusilli, or spaghetti)
2 cups fresh spinach, chopped
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
2 cloves garlic, minced
3 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon dried oregano (optional)
1 tablespoon lemon juice (optional)
Fresh basil or parsley for garnish (optional)
Instructions:
Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 3-4 minutes, until they begin to soften.

Add the spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes. If using, add the dried oregano and season with salt and pepper.

Combine everything: Add the cooked pasta to the skillet, along with the reserved pasta water (a little at a time to reach your desired creaminess). Toss everything together to combine. Lastly, stir in the crumbled feta cheese and lemon juice, if using. Mix gently until everything is well incorporated.

Serve: Remove from heat and serve warm, garnished with fresh basil or parsley if desired.
