Panalo Filipino Pancit : Long life & Prosperity Noodles with Shrimp & Vegetables

"Panalo" is a Filipino word that means "winner" or "victory," and in Filipino culture, it can be associated with success and prosperity. By combining it with Pancit, a dish often associated with long life and good fortune, the name signifies both well-being and success.

 

This vibrant and flavorful Pancit features Blue Dragon rice noodles paired with shrimp, cabbage, green beans, garlic, and onions. The dish is seasoned with a delicious combination of fish sauce and soy sauce, making it savory and slightly umami. The lime squeezed over it before serving adds a refreshing citrus kick!

A Flavorful Feast of Shrimp, Vegetables, and Noodles for Good Fortune and Endless Joy
Servings: 6

Ingredients:

  • 400g Blue Dragon rice noodles (or other rice noodles)
  • 500g shrimp, peeled and deveined
  • 3 tbsp fish sauce
  • 3 tbsp soy sauce
  • 3 tbsp cooking oil (vegetable or peanut oil)
  • 2 medium onions, thinly sliced
  • 6 cloves garlic, minced
  • 2 cups green beans, cut into 2-inch pieces
  • 3 cups cabbage, shredded or sliced thin
  • 2-3 green onions, thinly sliced (for garnish)
  • 1/4 cup red onion, thinly sliced (for garnish)
  • 2 limes, cut into wedges (for serving)
  • Optional: 2 tsp sugar or honey (to balance flavors)

For the Broth:

  • 4 cups chicken or vegetable broth (for more flavor)
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp ginger, freshly grated (optional, for extra depth of flavor)

Instructions:

  1. Prepare the broth:
  • In a medium pot, combine the chicken or vegetable broth, soy sauce, fish sauce, and grated ginger (if using). Bring to a simmer and allow it to heat up for a few minutes. Keep this broth simmering on low heat while you cook the other ingredients.

    2. Cook the noodles:
  • Bring the broth to a rolling boil in a large pot (or the same pot you use for boiling noodles). Add the rice noodles and cook according to the package instructions (usually around 3-5 minutes). The noodles will absorb the flavorful broth, giving them a rich taste.
  • Drain the noodles and set them aside, drizzling with a little oil to prevent them from sticking together.

    3. Cook the shrimp and vegetables:
  • While the noodles are cooking, heat a large skillet or wok over medium-high heat and add 1.5 tbsp of oil.
  • Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the pan and set aside.
  • In the same skillet, add the remaining oil and sauté the sliced onions and garlic for 2-3 minutes until fragrant and softened.
  • Add the green beans and cook for 4-5 minutes until they begin to soften but still have a slight crunch.
  • Stir in the cabbage and cook for another 2-3 minutes until it wilts slightly but retains some texture.

    4. Season the dish:
  • Lower the heat to medium. Pour in the fish sauce and soy sauce, and stir well to coat the vegetables. Add a little sugar or honey, if you like a touch of sweetness.
  • Add the cooked shrimp back into the pan, tossing everything together.

    5. Combine with noodles:
  • Add the cooked noodles into the pan with the shrimp and vegetables. Gently toss everything together, ensuring the noodles are well-coated with the sauce and mixed with the vegetables and shrimp.
  • If the dish seems a bit dry, you can add a splash of the broth you used to cook the noodles to keep it moist and flavorful.
  • Cook for an additional 1-2 minutes until everything is hot and well-combined.

    6. Garnish and serve:
  • Transfer the Pancit to a large serving platter or individual bowls.
  • Garnish with freshly sliced green onions and red onions.
  • Serve with lime wedges on the side for squeezing over the dish.

Tips:

  • Extra Flavor: If you want an even richer taste, you can simmer the broth with a couple of aromatics (like garlic, onion, or lemongrass) before using it to cook the noodles.
  • Vegetable Additions: Feel free to add extra vegetables like carrots, bell peppers, or snap peas for even more color and flavor.
  • Spicy Kick: For heat, add sliced chili peppers or chili flakes when cooking the vegetables.
